Tasting Notes

Vineyard management : Regular ploughing. Manual thinning out of the leaves. Green harvest. Manual picking in small baskets by varietal

Vinification:
Sorting of the harvest upon arrival at the cellar. Total de-stemming. Majority of direct pressing of the merlot and cabernet grapes. Partial "saignee" component on merlot. Alcoholic fermentation in cone-shaped stainless-steel vats. Automatic temperature control.

Ageing: Maturing in stainless steel vats for about 4 months

Colour: Nice bright pale rose robe

Nose:
very refined, fragrant and floral with scents of wild ripe strawberry and currant. The ripeness of the vintage can be guessed already by the nose.

Mouth:
Seductive freshness at the palate, pleasantly fruity, then round and balanced with good persistence and slightly spicy notes. A sort of unctuosity via a tonic finale.

Pure pleasure wine but also excellent companion of seasonal meals, ...salads, delicatessen, fish and meat grilled, any BBQ....
